Meatloaf Muffins


Cupcakes in the form of meatloaf, frosting in the form of mashed potatoes, and sprinkles in the form of cheese!

I made these for dinner and thought I'd share the recipe... Enjoy!

·         Recipe for: Meatloaf Muffins

·         Ingredients
2 lbs ground turkey
2 eggs
½ Medium Green Pepper – diced
½ Cup Red Onion – diced
1 tbsp minced garlic
1-1/2 cup bread crumbs
1 tsp salt
½ tsp pepper

·         Instructions
Preheat oven to 350.
I use muffin pans and make meatloaf muffins! Make sure you spray the tins with some non-stick cooking spray and your meatloaf muffins will slip out nicely after cooking. Turkey is not as fatty as Ground Beef so make sure you do this so they won’t stick! Makes 16 meatloaf muffins.

Combine all ingredients into a large bowl and mix well. After spraying your muffin tray with non-stick cooking spray, fill each muffin compartment  all of the way full.
Place into oven for approximately 35 minutes.

Updates

Hello everyone. Wow it's been a while since I have blogged. So I am updating everyone on the happening in my life. Well we got orders so we are moving to Jacksonville, FL. Good bye Guam! I am very excited to start this new chapter and cant wait to start exploring FL. We will be about a two hour drive away from Orlando. I am already planning my trips to Disney World and Universal Studios (The Wizarding World of Harry Potter). We will be vacationing in Vegas before we head to Jacksonville. After our vacation we will be driving to Florida with our two dogs. Excited but nervous at the same time! Our only real plan for our drive is to stop in Atlanta to see one of my besties, Laura. Chris is in A-School right now, studying to be a Maritime Enforcement Specialist. (Maritime Enforcement Specialists are a cadre of professionals well grounded in knowledge and skills pertaining to law enforcement and security duties. As such, members of this rating can be expected to be assigned challenging duties including traditional maritime law enforcement, anti-terrorism force protection, port security and safety, as well as providing unit-level training in these fields.) He is set to graduate July 2nd. So proud of him. He left me at home to hold down the fort and get everything ready for our move.


Sarge and Elle are doing good. Elle is still a puppy and I am still having issues potty training, plus she chews up everything. I don't think I've ever kept all my stuff put away so well before. Sarge still has only child syndrome. He is still food and toy aggressive. I have pretty much solved the food issue by feeding them separately in their kennels. But teaching Sarge to share his toys has been very challenging. They do play well together (minus toys). And I often find them cuddling. Elle loves her big brother and copies him a lot. Love them to death. They are my children and yes I treat them that way.

I am currently not working and have packed away all my scrapbooking stuff. I wish I could have kept my job a little while longer so I could have stashed away some more cash but well life happens. I am for sure missing teaching. I have been in contact with a studio in Jacksonville and hopefully can get a job there when I move.

Well I suppose that's all for now. Hopefully I haven't forgotten anything. Until next time!
